What is kagzi akhrot?
Kagzi (paper-shell) akhrot is a Kashmiri walnut whose shell is thin enough to crack between your palms — kagaz means paper. Hard-shelled walnuts need a nutcracker.
In-shell walnuts vs kernels — which is better value?
Roughly 40–50% of an in-shell walnut’s weight is kernel, depending on the shell. Compare the price per kg of kernel, not per kg of whole walnuts. In-shell walnuts keep longer; kernels are ready to eat.
Walnut kernel colours and grades
Walnut kernels are graded by colour: extra light (often sold as "snow white"), light, light amber and amber. Lighter kernels are milder and usually cost more.

Squeeze two kagzi walnuts together in your palm. For harder shells, rest the walnut on a folded kitchen towel and tap along the seam with a rolling pin or hammer.
