Ingredients

  • 2 cups Raw makhana (fox nuts)
  • 2 tablespoons Ghee or olive oil
  • 1.5 tablespoons Peri peri spice mix
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Smoked paprika
  • To taste Salt

Instructions

  1. Heat a heavy-bottomed pan on medium-low heat. Add the makhana and dry-roast for 5-7 minutes, stirring continuously, until they turn crisp and slightly crunchy when bitten.
  2. Transfer the roasted makhana to a plate and let cool for 1 minute.
  3. In the same pan, heat the ghee or oil on low heat. Add garlic powder and smoked paprika. Stir for 10 seconds until fragrant.
  4. Add the peri peri spice mix and salt. Stir quickly to avoid burning the spices.
  5. Add the roasted makhana back to the pan. Toss continuously for 1-2 minutes to coat every piece evenly with the spice mixture.
  6. Taste and adjust salt or spice as needed. The makhana should be fully coated with a vibrant red-orange hue.
  7. Transfer to a serving bowl. Let cool completely before storing in an airtight container. Serve immediately with tea or as an anytime snack.
