Ingredients
- 2 cups Raw makhana (fox nuts)
- 2 tablespoons Ghee or olive oil
- 1.5 tablespoons Peri peri spice mix
- 1/2 teaspoon Garlic powder
- 1/2 teaspoon Smoked paprika
- To taste Salt

Instructions
- Heat a heavy-bottomed pan on medium-low heat. Add the makhana and dry-roast for 5-7 minutes, stirring continuously, until they turn crisp and slightly crunchy when bitten.
- Transfer the roasted makhana to a plate and let cool for 1 minute.
- In the same pan, heat the ghee or oil on low heat. Add garlic powder and smoked paprika. Stir for 10 seconds until fragrant.
- Add the peri peri spice mix and salt. Stir quickly to avoid burning the spices.
- Add the roasted makhana back to the pan. Toss continuously for 1-2 minutes to coat every piece evenly with the spice mixture.
- Taste and adjust salt or spice as needed. The makhana should be fully coated with a vibrant red-orange hue.
- Transfer to a serving bowl. Let cool completely before storing in an airtight container. Serve immediately with tea or as an anytime snack.
