These no-bake energy bars combine Pala-G flavoured almonds, cashews, and pistachios with dates and seeds for a protein-rich snack that tastes like dessert. Perfect for pre-workout fuel, post-gym recovery, or a healthy treat on busy days.
Ingredients
- 1/2 cup Pala-G California Almonds
- 1/2 cup Pala-G Cashews (plain)
- 1 cup Medjool dates, pitted
- 1/2 cup Rolled oats
- 2 tablespoons Chia seeds
- 2 tablespoons Honey or maple syrup
- 1 teaspoon Vanilla extract
- Pinch Sea salt
Instructions
- Place dates in a food processor and blend until they form a sticky paste.
- Add almonds, cashews, and oats. Pulse until roughly chopped but still chunky.
- Add chia seeds, honey, vanilla, and salt. Blend until the mixture comes together into a sticky dough.
- Line a square baking tin with parchment paper. Transfer the mixture and press down firmly with a spatula or your hands.
- Refrigerate for 30 minutes to firm up.
- Lift out using the parchment paper, cut into 8 bars, and store in an airtight container in the fridge for up to 2 weeks.
